Bad Ass Breakfast Salad

Yes, I said salad…for breakfast. Ok, well you can try it for lunch or brunch, or even dinner, for that matter. This salad packs in the protein, fiber and nutrients to power you up for the whole day. All this while giving you the satisfaction of all the things you love about breakfast.

Bad Ass Breakfast Salad Ingredients:

2 eggs
Salad greens
Vegetarian sausage patty, chopped (or another breakfast meat of your choice)
Edamame, cooked
Cucumber, diced
Dried fruit of your choice (diced apricot, berries, raisins, craisins, etc)
Sunflower seeds
Fat free cheese shreds, 2 tblsp
Butter
Olive oil

Combine the salad ingredients in a shallow bowl and set aside. Use as much of each ingredient as you prefer and feel free to substitute other salad fixings you prefer. There’s no right or wrong here!

In a sauté pan on medium heat, melt a pat of butter along with a tablespoon of olive oil. Add two eggs without breaking the yolks, seasoning with salt and pepper to taste. Cover with a lid. Cook for about 3 minutes or until edges start to crisp and brown up. With a large spatula, gently flip the eggs over in one piece if possible. Turn off the heat at this point but keep the pan on the burner. After another couple of minutes, carefully remove the eggs with the spatula and place on top of the salad. 

You’ll notice there’s no dressing on this salad. To make the dressing, simply pierce the soft yolks over the salad! Viola!
